Here’s the trick, if you have decided to make a caramel on a Sunday evening and you just happened to have crystallized your last bit of sugar mix then there is no need to throw it away
SIMPLY just add abit of water and turn up the heat and stir. The sugar will break down at a higher temperature and dissolve, turn down once you hit the colour you want like you would with a normal caramel keep whisking till all the crystallized sugar has gone.
